32 ounce can of tomato juice
1 Medium tomato (3 Romas are best), chopped
1 large onion, chopped
1 green bell pepper, chopped
1 Cup of Baby Bella mushrooms, chopped
2 cloves of garlic, chopped
1 tbsp lime juice
1/4 tsp cayenne pepper
Pour the tomato juice into a large pot, over a medium fire. In a large sauce pan, saute all chopped veggies. Saute mushrooms, in a tablespoon of Grape seed oil, until tender, or to your liking. Then scoop all veggies out of the sauce pan, and into the large pot of tomato juice. Season with 1 tbsp of lime, or lemon juice and the 1/4 tsp of cayenne pepper. Salt it to taste if you choose, with sea salt. Bring to a boil on high heat until it thickens a little. And enjoy!
